Freedom Ecuador Restaurant & Bar has the best and most comprehensive menu to be found in Canoa, and in the entire Province of Manabi, Ecuador. Both locals and travelers will be sure to be pleased by the wide-ranging international menu, the quality of food, and the prices at Freedom.

Owner and Head Chef Jaime David Jaramillo brought 35 years of experience into the development of Freedom Restaurant & Bar. He explains, “I wanted to create not only the best food menu native to Ecuador, but I also wanted to offer the best menu found on an international scale. The world is a lot bigger than Ecuador, and great food can be found all over.”

Indeed, the menu is sure to have something for everyone. Cerviche—a seafood dish and staple of Ecuador—is served in Shrimp, Fish, Clam, Blue Crab, and Mixed varieties, with prices ranging from $5.99 to $7.99 USD. Soup-lovers will be happy to find a wide-range in flavor, from Shrimp, Bean, Mote, Potato, Plantain, Tuna, and Avacodo varieties—each for $3.99 USD. Main courses and cuisines include some of the freshest seafood found in South America, Steaks, Pastas, Mexican food, Salads; Custom Burgers, Papi Dogs, and Pizzas. Prices are far beyond reasonable, ranging from $3.50 to $11.99 USD.

Beer-lovers will be satisfied by Ecuador’s two native beers, Pilsner and Club—with prices for a liter only at $1.50 USD. And those seeking to have the best coffee in the area won’t be disappointed by Freedom’s high-end coffee and espresso machine—a luxury hard to find in Ecuador.

“I wanted to provide a place for people that was enjoyable and the best experience in Canoa, but also free to use”, states Jaime David. And this he has done quite well. Freedom Restaurant & Bar is far more than it’s name, as visitors can dine in an outside lounge area, play billiards and darts, attend live music and performances, and practice their salsa in the dance hall. Freedom also has 3 Hookahs for those desiring flavored and filtered tobacco, a projector screen for entertainment and sporting events, and wireless internet (and a computer)—all free of charge and at no cost to the visitor.

ATMOSPHERE

The atmosphere at Freedom Restaurant & Bar is amazing; no detail of the establishment went overlooked. “Freedom has been my dream for over 30 years. During that time I’ve been taking notes on every detail of the establishment I wanted to create; now my dream has become a reality.” The building itself, a 4000 square/foot structure comprised mostly from the native bamboo, is indeed remarkable. There are 18 large windows flooding Freedom with the Ecuadorian Sun, and the west wall is retractable so visitors can enjoy the comfort of being indoors while feeling directly on the beach. There are two Arabic-style lounging areas, 9 indoor hammocks, and 8 areas of seating for formal dining. The bar itself is also constructed mostly from bamboo, and the walls are decorated both formally and informally with local and international themes.
